Sake brewing where the history and the future merge
Brewing with a free sensibility that is not bound by customs and concepts, and not according to textbooks.
With the new brand "Junsei", we, Fukunishiki, have begun a new challenge in our 175th year of business.
This was triggered by the realization that some of the sake brewing methods taught and passed on by our predecessors were aimed at homogenizing the quality of sake, while others were detrimental to the original flavor of the sake.
Since then, we have felt strongly that we must make every effort to provide our customers with the true taste of sake, which is essentially made from rice and water.

However, when they are well executed in the taste of sake, the subtle flavors turn out to be the depth, and the sweetness can be expressed as richness. There is a tendency that sake needs each characteristic.
We have come to believe that we should break up the old pattern of textbook methods of making sake and preconceived notions, and express what we think is delicious in our own way.
“Junsei” was born in order to make the best use of the blessings of the earth in this region of Kita-Harima, and to deliver the taste of the sake as it is.
We hope that our new challenge, "Junsei" , will help you fall in love with Japanese Sake.
